Bacon & Potato Chowder

Directions

  1. Peel and dice carrot and potato into bite-sized pieces. Dice bacon.
  2. In a pot, heat garlic oil and Sautee bacon until it begins to brown then add in carrot and sautee for a further 3-4 minutes
  3. Next add in all ingredients except for the cornflour mixture and the corn kernels
  4. Bring pot to a boil and simmer until the carrot and potato are cooked through. Approx. 15-20mins
  5. Next add in the corn and the cornflour and stir through until the cornflour thickens the chowder
