Cook GF spaghetti but leave it al dente as it will continue to cook when added to the sauce later. Rinse in cold water to stop cooking further and leave to the side
In a small bowl combine curry powder, oyster sauce, soy sauce, water, stock cube and garlic oil (if using). Mix to combine and set aside
In a large pot, brown beef mince with the carrot and cook until beef is no longer pink and carrot has started to soften
Next add in the zucchini and sauce mixture. Bring to a boil and turn down to a simmer
Add in the cabbage and bok choy and cook until vegetables are cooked to your liking (approx. 10-15mins). Season with salt and pepper to taste and remove from the heat
Allow the sauce to cool down for approx. 10-15 mins. Once cooled, gently stir in the cooked GF spaghetti so that it doesn’t break too much
Once all combined, serve and enjoy!
