Chicken Enchiladas

Directions

  1. Preheat oven to 180C (375F)
  2. In a saucepan heat up olive oil then add in Gluten Free flour and spices. Cook for 1-2 mins
  3. Next add in stock and tomato paste and bring to a boil
  4. Simmer sauce for 5-10 mins until thickened
  5. While the sauce is simmering, combine all the filling ingredients together in a bowl and mix well
  6. Once sauce is cooked, spread approx. ¼ cup onto the base of an oven tray
  7. Next, fill each tortilla with ¼ of the filling mixture
  8. Roll up each tortilla and place it seam side down into oven tray
  9. Once all tortillas are filled and rolled up in tray, pour remaining sauce over the top and sprinkle with more cheese (approx. ¼-1/2 cup).
  10. Bake in oven for 20mins or until cheese is melted.
