Chicken Fried Rice

Directions

  1. Heat garlic oil in wok/frying pan on high heat
  2. Once oil is heated, add in chicken and season with some salt and pepper and cook until browned
  3. Remove chicken from pan and add in diced bacon
  4. Cook bacon for 1-2 minutes until it is beginning to brown and add in the diced carrot
  5. Cook the carrot and bacon for a further 5 minutes until the carrot begins to soften then add in the zucchini and capsicum
  6. Stir fry vegetables for 2-3 minutes then add in the soy sauce, sesame oil, salt and pepper
  7. Once vegetables have softened or are cooked to your liking, add in the corn, spring onion and chicken back into the pan
  8. Next add in the cooked rice and stir to combine
  9. Continue to cook until the rice has been heated through and chicken is cooked through
