Cream Free Carbonara

Directions

  1. Cook pasta as per package instructions *be sure to salt your water*
  2. Add eggs and parmesan together into a bowl and whisk to combine
  3. While pasta is cooking, heat garlic oil in pan and cook bacon on med high until brown and caramelised
  4. Turn off the heat
  5. Once pasta is cooked, do not drain. Using tongs, take pasta out of pot and add straight into pan with bacon. Quickly add in the egg and parmesan mixture and stir with tongs to combine until cheese is melted. Add in a small amount of pasta water at a time and continue to add until a nice sauce develops.
  6. Place zoodles in a microwave safe bowl and add in 2 tbs water. Microwave for 1-2 mins until cooked to your liking
  7. Drain zoodles of excess water and add into pan with pasta and bacon.
  8. Season with pepper.
  9. *Substitute pasta for zoodles if you're counting calories
