Peel and dice carrot and potato into bite sized pieces
In a large pot, heat up garlic oil and sautee carrot and potato for 2-3 minutes until the vegetables begin to soften
Add in all other ingredients except for the pasta and the spinach
Bring pot to a boil and then turn down to simmer until the vegetables are cooked. Approx 15mins
Once the vegetables are cooked, add in the pasta and continue to simmer for 5 mins then turn off the heat, add in the spinach and cover the pot with a lid. The pasta will continue to cook with the residual heat.
Once pasta is cooked to your liking and the spinach is wilted, serve and enjoy
*you may need to add in some more water as the pasta can cause the soup to thicken too much as it cooks*
