Directions

  1. Rinse rice well until water runs clear
  2. In a pan, heat up EVOO and Garlic oil (if using) and add in herbs.
  3. Cook for 2-3 minutes then add in spinach.
  4. Cook until the spinach wilts and then add in rice and all remaining ingredients except for the lemon juice
  5. Bring to a boil then turn down to a simmer
  6. Cook until rice is al-dente (it will continue to cook as it cools) and add in lemon juice
  7. Once cooled and rice has finished cooking, serve and top with crumbled feta cheese (if using)
