Swedish Meatballs and Mash Potato

Directions

  1. Add all ingredients for the meatballs into a bowl or stand mixer and mix together until well combined
  2. Roll into 40g balls-approx 12 balls
  3. Place peeled and diced potatoes into a large pot and cover with cold water
  4. Place pot onto stove and turn heat to high. Salt the water generously
  5. Once pot it boiling, turn down to a med/high simmer and cook until potatoes are tender enough to break on the side of the pot when pressed with a fork- approx. 10-12mins
  6. While the potatoes are cooking, brown the meatballs on all sides in a pan with olive oil then remove from pan
  7. To make the sauce, melt butter in pan with olive oil then add in the cornflour and stir for 1-2minutes
  8. Next add in the water/stock and the milk and bring to a boil
  9. Add the meatballs back in and simmer in the sauce for 10-12mins until cooked through
  10. Season with salt and pepper to taste
  11. Once the potatoes are cooked, drain then mash them and add in the remaining ingredients
