Add all ingredients except for the bread into a bowl and whisk until smooth
Heat 1tbs olive oil or vegan butter in pan on medium heat
Dip bread slices into batter coating each side thoroughly. If using sourdough or a firmer bread, gently press down into batter so bread can absorb as much as possible. If batter seems a little thick, thin with some more water
Place bread onto pan and cook until golden brown on each side, approx. 3-4 minutes per side
Remove from pan and top with desired toppings
